This cava millésimé has been produced with the following varieties, macabeu, parellada, xarel·lo and chardonnay. During all the fermentation process and the ageing periode, the bottle had permenently a natural cork. The bottling, labelling and slitting cork procedures were all handmade processed, with real care. Its long ageing periode gives itself a great complex aroma: we won't find primary or fruity aromas, however we may find a mix of fresh yeasts (cakes and pastries touch), that remind us some smoked and coocked vegetables. Without any doubt "segle XXI" (XXI century) is our best product, and really shows the way we do work. Cava it is a kind of a product that needs a lot of care in all of its processes. To hurry up it is the enemy of a well done work. That's why we can guarantee you that when you will open a bottle of "segle XXI", you will taste a cava at its maximum expression. |
